At Easter it can also be a bit more opulent at the end of Lent. Don’t you think so? I have created a cake for you, which is very fast made and nevertheless an eye-catcher. The lemon poppy cake also tastes very light and fresh. You are completely free with the decoration. It doesn’t necessarily have to be decorated with Easter and therefore fits perfectly into the summer. perhaps decorated with edible flowers? Or with fruits…

Because I baked the bases in four flat layer cake moulds at the same time, the whole thing didn’t take long either. Apart from a cooling time, it didn’t take me an hour. When all the ingredients are in the house, it’s also a last-minute cake when there’s a surprise visitor.

INGREDIENTS
2 eggs
100 g sugar
100 ml rapeseed oil
100 ml milk
150 g spelt flour
1 teaspoon baking powder
50 g poppy seed
750 g mascarpone
2 tbsp sugar
1 glass (320 g) Lemoncurd
Chocolate bunnies, chocolate eggs, marzipan eggs etc. for decoration

PREPARATION
Preheat the oven to 180 degrees top/bottom heat.

Grease 4 small 18 cm diameter baking tins (I used the flat ones for layer cakes).

Whip the eggs with the sugar until light and creamy, then stir in the oil and milk briefly. Mix flour with baking powder and poppy seeds and stir spoonfuls into the dough. Divide the dough into the moulds and bake for about 20 to 25 minutes until golden brown.

After baking, knock the bases out of the moulds and let them cool on a grid.

If you don’t have the flat moulds for the layer cakes, you can also use small springforms, divide the dough into two (the baking time is then approx. 30 minutes) and cut the base horizontally once after it has cooled down.

For the filling mix mascarpone with sugar and lemon curd. Place one base on a plate and spread with 2 tablespoons of cream, place the next base on top and spread with two tablespoons of cream again. Continue until all 4 bases are stacked. Add only 1 tablespoon of cream to the top.

Then coat the cake from the outside with cream and smooth with an angled palette. Spray small tuffs with a small star nozzle at the top edge of the cake. I decorated the cake with two chocolate bunnies and marzipan eggs. Since I still had some cream left at the end, I sprayed a small decoration at the lower edge and also placed Maripan eggs there.

I freed the chocolate rabbits from their aluminum dress. I didn’t find that so appetizing on the cake. Who knows who had them in the supermarket already everything in their hands. But I put the ribbons on again. So they were not quite “naked”.

My sister had another cake with me good – so I gave her the cake. Finally a neutral test person – hihi. But also her and her partner enjoyed this light lemon poppy cake very much. Its small size makes it perfect for 2 to 4 people. Because there is often something left of “big” cakes or you eat them for several days.

With this cake I finish the Easter bakery for this year and wish you happy Easter days with hopefully great weather, so that the Easter bunny can hide his eggs also outside.
