Grill recipes for fish, meat, vegetables – with sauces and side dishes from fast to refined. Our recipes for barbecuing are a lot of fun this summer!
The best grill recipes: Our favourites
Whether at home in the garden, relaxed in the park or cozy on the beach – barbecuing is simply fun, no matter where you are. With good weather, cold drinks, company and a relaxed atmosphere, the delicacies from the grill taste twice as good!
The most important thing about the great barbecue fun – besides the quality of steak, fish and vegetables – are of course the barbecue recipes. Long gone are the days when you simply put marinated barbecue meat and bratwurst on the grill. Following the example of the American barbecue, barbecuing has now developed into a science that has produced many masters and some great recipes. The BBQ is no longer just about the old question of “charcoal, gas or electric grill”.
Grill rethinking: grill recipes for healthy enjoyment
Today, instead, people talk about smokers that have been gently cooked for many hours and are considered to be much healthier than conventional barbecues. There are discussions about fancy rubs and grill spices, elaborate grill marinades, spare ribs, pulled pork and the little tricks and tricks that turn a piece of meat into something even tough men would like to write poems about. And people talk about vegetarian and vegan alternatives to the grill, which have long been just as much a part of a BBQ as sausages and steaks. Here we’ll tell you everything you need to know if you want to grill vegetarian.
Also in our grill recipes there are many of these creations, with which the next grill season cannot come early enough. The modern recipes, as we present them in our picture series, are proof of a completely new way of thinking among the grill masters. Fatty and charred was yesterday. Contemporary recipes place value on a high quality of ingredients, on organic products, on small, refined ideas and healthy side dishes for grilling. The days in which one could appear with a simple pasta salad with mayonnaise on a grill party are long gone. But don’t worry: our grill recipes will make you look good. For example, we’ll show you how to grill vegetables and which salads go well with grilling.
Highlights from the grill: Refined grill recipes
Then you’ll have burgers made from organic beef, crispy spare ribs, grilled pork belly with a glaze of boiled cola and exotic spiced ink meat skewers. For vegetarians, there are sweet potatoes cooked directly in the embers, sheep’s cheese packets with intense spice flavours cooked in tomato brew and green asparagus grilled in vegetable tongs.
The homemade grill marinade is just as much a must for every BBQ as homemade grill sauces. With our marinades for barbecuing this is not difficult and quick to do and even barbecue sauces can be prepared in less than 15 minutes – and still make your guests enthusiastic. How about a fruity cranberry ketchup or an aromatic paprika pesto?
Grill recipes: Much more than just meat
Of course, tasty side dishes are not to be missed with grilled meat and fish: Salads, for example, or grilled vegetables. Whether asparagus, paprika, zucchini or everything together on a skewer – everything is allowed on the grill and we will tell you what to look out for when grilling vegetables. Vegetarian grill recipes like stuffed mushrooms, veggie burgers, vegetable skewers and flat bread with different dips taste at least as good as grill meat.
Potatoes or sweet potatoes are also very practical for grilling. They can be cooked unpeeled in aluminium foil directly in the embers so that they do not take up any space on the grill – and are ready with the meat on time. Here we’ll explain how to grill potatoes and how to grill sweet potatoes.
And to end the barbecue evening comfortably, fresh fruit comes to the grill. Sounds extraordinary? It is; but grilling fruit is exceptionally good! Try it yourself! Grilled peach, for example, tastes really delicious.
Practical tips around grilling
The classic charcoal grill is perfect for barbecuing in the garden or on the go because it is easy to take with you. When barbecuing charcoal, you should only start barbecuing when the charcoal is well glowed. It should be covered with a light grey layer. Also good to know: The charcoal needs less preheating time than briquettes, but burns shorter. If you prefer to grill at home quickly and without a lot of smoke, use the gas grill or the electric grill. Both are also great for a small round on the balcony if you simply don’t feel like cooking and want to put something on the grill spontaneously.
Who wants to grill meat, should not take too thin slices, otherwise they dry out quickly. You should generally keep your hands off marinated meat. It often contains many colourings and flavour enhancers. Marinating meat is really easy and fun. When grilling fish, you should be careful to use high-fat varieties such as trout and salmon. We’ll tell you what to consider when grilling trout and salmon. But beware: Do not grill fish too hot, otherwise it will get dry. In our recipes we’ll tell you what else you need to consider.
