Why do we love asparagus salad so much? Because we now feel like light, fresh salads and our favourite spring vegetable: asparagus!

Asparagus salad: the perfect slimming product

Now, in spring, we simply cannot resist asparagus salad – because it tastes so light and fresh. Exactly the right thing after a hearty winter kitchen. By the way, asparagus not only tastes light: with only 17 kcal per 100 grams, it is an ideal slimming product. As long as you don’t serve it with greasy hollandaise sauce or drown it in melted butter.

That’s why asparagus salad is the ultimate spring dish: a light vinaigrette with asparagus, perhaps a sophisticated aroma partner like coriander, chilli or mustard – and a healthy, delicious dish is ready in no time. Asparagus also contains a lot of protein, phosphorus, calcium, sodium and iron. The content of potassium and aspartic acid in particular stimulates kidney activity and has a detoxifying effect on the body. Well then, let’s have a look at the asparagus salad!

Asparagus salad: classic and creative recipes

The classic asparagus salad, as grandma always liked to eat it, is prepared with flour, eggs, milk, butter, onions, parsley and eggs from fresh asparagus (peeled and cut into pieces) and seasoned with lemon juice. But of course there are no limits to your imagination with asparagus salads. If you want to eat asparagus raw, for example, it can be used even more varied.

Asparagus salads with fruits are particularly good for light spring and summer cuisine. Sweet and sour have proven to be the ideal accompaniment to asparagus and so savoury salads with asparagus and strawberries or with mango and smoked salmon have long been among our spring favourites. Grapefruit and beetroot are also great companions for an unusual asparagus salad. They are ideal to surprise your guests and show them how versatile asparagus can be in salads.
